There really was whipped cream before 1910 - they didn't have electricity, but they had whipped cream, ice cream, real butter, etc.

A large (2") wire whisk is necessary - just continue to whisk, using a rythym and a cold bowl. You will get great results. I prefer this method, because I can stop and sample the ingredients I put in (vanilla, lemon zest, orange pulp, cinnamon, etc.). It is a slower process, but I think that it allows for more accurate flavouring!
